Cooking 1.0.1: Cauliflower Latkes (Day 1)


Ingredients :

  • One head cauliflower
  • 1/2 a cup breadcrumbs
  • 1/2 shredded cheddar cheese
  • 2 egg whites or one egg
  • One tablespoon olive oil


To Prepare:

  • Break cauliflower into small bite sizes peices and boil until soft (about 12-15 mins)
  • Drain and return to pot
  • Add bread crumbs, cheese, and egg whites and mash mixture with a masher or large wooden spoon. Egg beaters dont work!
  • Add salt, pepper, cayenne, and sriracha to taste
  • Coat a large cook pan with olive oil. You will probably have to add more as you go along
  • Using hands make palm sized patty's with the cauliflower mixture. Place in pan over medium heat for about 2 1/2 mins on each side.
  • Transfer pattys to oven on 300 degree heat to keep them warm while the others cook


Since I never follow recipes directly to the T, this one took some trial an error. I made a couple of test patties and wound up adding more bread crumbs to make them stick and then adding more sriracha to make them spicier  The recipe above reflects my changes. While a little messy, these little guys have been one of the best things I've made and I continue to make them on a weekly basis. Enjoy!
