Cooking 1.0.1: Sriracha Avocado Egg Salad (Day 28)

This creamy avocado sriracha egg salad is a hybrid of guacamole and egg salad but w/ a spicy kick

When I saw this recipe, I almost jumped up and down with excitement. Egg salad has always been one of my biggest vices. That being said, I rarely make it at home because the idea of having to glob mayonnaise in a bowl really disturbs me. When I saw this recipe that used greek yogurt in place of mayo AND incorropated  avocado and sriracha (hands down two of my favorite things in the world) I knew i had to go for it. Not only is it healthy and delicious it's all incredibly filling and left me full for hours. Sadly the picture I took didnt make it look all that appealing, so I opted to use the one from the website instead. Happy Friday everyone!

Ingredients and Preparation
  • Two hard boiled egg
  • Two Tablespoons plain greek yogurt
  • 1/2 an avocado
  • 1/4 a red pepper (I used red onion instead since I dont like bell peppers)
  • Salt, pepper, and sriracha to taste
  • Mash ingredients in a bowl and enjoy alone, on toast, or in lettuce wraps

  1. I am really excited about this - all of these ingredients are available in Switzy (well, i'll substitute the fake sirracha i buy for the real thing, but still) - nom nom nom
