Cooking 1.0.1: Feta, Avocado, and Corn Dip (Day 21)


I've never met a dip I didnt like. When I read about Alex's feta and avocado dip I new I had to whip up a batch. That huge tray pictured above? I devoured the whole thing myself in less than three days. It was delicious on tortilla chips as well as on toast in the morning!

Ingredients and Preparation 
  • Two avocados cut into chunks
  • Two cans or three ears corn
  • One red onion, chopped.
  • Twelve ounces crumbled feta cheese
  • 1/2 cup olive oil (optional)
  • Crushed red pepper and salt to taste
  • Combine all ingredients in a large bowl, mix and enjoy!
