I've never met a dip I didnt like. When I read about Alex's feta and avocado dip I new I had to whip up a batch. That huge tray pictured above? I devoured the whole thing myself in less than three days. It was delicious on tortilla chips as well as on toast in the morning!
Ingredients and Preparation
- Two avocados cut into chunks
- Two cans or three ears corn
- One red onion, chopped.
- Twelve ounces crumbled feta cheese
- 1/2 cup olive oil (optional)
- Crushed red pepper and salt to taste
- Combine all ingredients in a large bowl, mix and enjoy!
