Everyone loves a good grilled cheese. My new favorite version of the classic mixes the sweet taste of fig with the bitterness of arugula and the creamyness of soft goat cheese. Eaten as a sandwich or open faced it is incredibly delicious and simple.
Ingredients
- Two pieces of sourdough bread
- Handfull of arugula
- 1/2 cup crumbled goat cheese
- Two teaspoons fig jam
- Tab of butter
Preparation
- Melt butter in a large non stick skillet. Turn off heat
- Rub fig jam on each slice of bread. Place arugula on one side and goat cheese on the other. Put halves together.
- Place sandwich in pan and cook over medium high heat for about two mins on each side till goat cheese is softened and bread is nice and crispy.
