I still remember my first breakfast taco. My family and I had moved to San Antonio one month prior and had decided to make the four hour treck down to the coast for the weekend. It was a pretty eventful trip Early in the day my sister accidentally slammed the upper part of my arm in the car door causing me to get an 8 inch dark purple bruise. Later, my Dad cut his hand open trying to open a bottle of wine with a carrot peeler. So we went to the ER so he could get stitches and a nurse called the cops because she thought my bruise was the result of child abuse at the hands of the man who was so desperate to have a glass of wine at 11:00 am that wound up needing 12 stitches. All these things might have soured the trip, but luckily I was still on a high from wolfing down two potato and egg tacos with red salsa from taco cabana, I place that until that morning I had deemed revolting and scary. Since then potato and egg has always been my taco of choice. Growing up I ate one pretty much every day but Ironically Ive never tried making them at home. Inspired by Viva burritos french fry and egg burrito and a seductive picture of a sriracha and potato omelette on pinterest (id link it up here but my fucking office decided to block pinterest this morning) I decided to give it a whirl. The only thing that was missing in my kitchen was classic mexican salsa (which can only really be gotten locally at viva burrito) and a homemade flour tortilla. Too lazy to venture outside, I opted to use corn tortillas and and sriracha instead. While not as authentic as I would have liked, my breakfast-for-dinner creation was still pretty damn delicious. Ingredients (Makes two tacos)
- Two eggs or four egg whites
- Two corn tortillas
- 1 1/2 cups oven baked french fries (use a good brand. Not that oreda shit. I used Alexis organic)
- Cooking spray
- Sriracha
Preparation
- Pre heat oven and make fries according to package direction. Let cool for 3 mins. Chop into bite sized pieces.
- Get two frying pans. Coat both in cooking spray. In one, add eggs. In the other, add tortillas
- Slowly stir the eggs over medium heat until they start to scramble. When they are almost fully cooked, but still a little wet, add fries to mixture and stir so the eggs and the fries stick together.
- As the eggs are cooking, crips the corn tortillas in the pan so they are slightly crunchy. About 2-3 mins on each side.
- Add egg and fry mixture to the tortillas and top with sriracha. Add cheese if desired. Enjoy!!!
