I've been a fan of all things coconut for as long as I can remember. Not only does it taste fantastic, the mere smell of it fills me with waves of nostalgia for summers in New York with my family. Since pineapple is my favorite fruit it's no surprise that one of my favorite uses for coconut is the Pina Colada. The past two weekends I have found myself seriously craving this drinking and have ordered versions of them at two separate restaurants. Last night I decided to make one fresh at home using my favorite coconut mixer, coco lopez. There are many different methods for making this tropical concoction online but I find most of them to be seriously lacking. They are full of frozen flavorless fruit and diluted mixtures filled with artificial ingredients and usually turn out chunky and flavorless. My combination of coco lopez, fresh pineapple, and a dash of my new obsession , Rumchata, turned out sweet, creamy, and insanely delicious. I didn't do any direct measuring when adding the pineapple and ice but luckily this is a fairly easy recipe to taste-and-add to as you go. Enjoy!
Pina Coladas (serves 2)
- 6 ounces Coco Lopez
- 1 cup fresh pineapple
- 1/2 a blender worth of ice
- 3 shots Rumchata or any rum of your choice
- Combine in a blender, pulse for 1 minute and enjoy!
